Domaine Amiot-Servelle: The History and the Estate

In the prestigious village of Chambolle-Musigny in Burgundy lies Domaine Amiot-Servelle, which for generations has been synonymous with high-quality winemaking.
The story of the domaine began in 1920 when Clément Tachot founded the property with a small amount of vineyard holdings in some of the best sites in Chambolle. In the 1950s, the estate was taken over by his son-in-law, Jean Servelle, who quickly made his mark on production and expanded the vineyard holdings. Jean Servelle was dedicated to preserving fine winemaking traditions - he became a central figure in Burgundy, building a reputation for wines that reflected the characteristic elegance and structure of the region.

A new era for Domaine Amiot-Servelle began in the 1980s when Jean’s daughter, Elisabeth Amiot, took over. When Elisabeth’s husband Christian Amiot joined in 1989, the family's winery was truly transformed into what we know today.

This marked the beginning of a continuous development of the estate, which over time would become one of the most recognized producers in Chambolle-Musigny. An important step in the domaine’s growth was the early transition to organic viticulture, which began as early as 2003 and was certified in 2008. This move was crucial in ensuring sustainable wine production and respect for nature, which continues to be a cornerstone of the domaine’s philosophy.

Over the years, Domaine Amiot-Servelle expanded its vineyards to around eight hectares, most of which are concentrated in Chambolle-Musigny, but also extending into other prestigious areas such as Clos Saint-Denis and Charmes-Chambertin.

The New Generation: Prune and Antoine

Today, it is the siblings Prune and Antoine Amiot-Servelle who lead Domaine Amiot-Servelle and continue the family’s legacy and traditions. With strong backgrounds in winemaking and vineyard management, they have introduced new perspectives and innovative methods to the estate while preserving the respect for the core philosophy that has guided the domaine through generations.

Prune Amiot-Servelle, a trained oenologist, returned to Chambolle-Musigny in 2011 after gaining experience in Côte-Rôtie and at the renowned Maison Jaffelin in Beaune. Her expertise and passion for vinification quickly made her the heart of the winemaking process at Domaine Amiot-Servelle. She has worked systematically to refine vinification, succeeding in balancing the classic Burgundy style with modern techniques that ensure the wines both reflect the terroir and possess an elegance that makes them attractive both young and with age.

Antoine Amiot-Servelle joined the domaine in 2017. With a background in wine management and viticulture, he naturally assumed responsibility for vineyard operations. With his expertise in sustainable cultivation techniques, he has been central in implementing further initiatives aimed at reducing the ecological footprint of the vineyards, while ensuring that all grapes are harvested at the optimal time to best express the terroir.

Antoine has also played an important role in the development of the estate’s new facilities, including a new winery completed in 2022. The winery is designed around gravity-flow principles, reducing the need for pumps and thereby minimizing mechanical interference in vinification. This ensures the grapes' natural integrity is preserved—central to the wines produced under their leadership.

Prune and Antoine work closely together, creating a harmonious balance between winemaking and vineyard work. They form a strong team, and their ability to collaborate effectively is evident in the high-quality wines they continue to produce. They have succeeded in building on the foundation laid by their parents while bringing new ideas and visions that point towards the future of Burgundy wines.

With Prune and Antoine at the helm, Domaine Amiot-Servelle is well-equipped to grow and develop in the coming years. Their wines, already recognized for their elegance, complexity, and fine balance, will undoubtedly become even greater with time. The Amiot-Servelle Parcel

We have assembled a parcel containing six fantastic wines from Amiot-Servelle’s 2022 vintage. All sourced from Premier Cru vineyards in the magnificent Chambolle-Musigny. Neal Martin from Vinous also comments on the 2022 vintage:

"This is a wonderful array of wines, much more elegant and refined than those I encountered during my first visit. Apart from a predictably sublime Les Amoureuses, Chambolle-lovers should get excited about their Les Fuées and Les Borniques Premier Crus […]. But overall, this is a very convincing set of wines marking the opening of a new chapter at Amiot-Servelle."

All the wines are produced in extremely limited quantities, and although we do not know the exact numbers, we know the maximum permitted production - and it is very little. Availability among the world’s wine merchants further testifies to the extremely limited supply, with only a few listings available on wine-searcher.com - and rarely full cases.

Amiot-Servelle Chambolle-Musigny Les Amoureuses Premier Cru 2022

Les Amoureuses is one of the most famous and sought-after Premier Cru vineyards in Chambolle-Musigny, where Amiot-Servelle owns 0.45 hectares. It is located directly below the legendary Musigny vineyard, inevitably sharing some of its qualities. Thus, it is not surprising that Les Amoureuses is regarded as grand cru quality, even if it does not officially have that classification.

Amiot-Servelle Chambolle-Musigny Derrière la Grange Premier Cru 2022

Derrière la Grange is, after Les Amoureuses, probably Amiot-Servelle’s best Premier Cru. From only 0.25 hectares, they produce an extremely limited quantity. According to Amiot-Servelle themselves, Derrière la Grange is a wine that should ideally be cellared for at least seven years to allow it time to open and develop. A wine with excellent aging potential.

Amiot-Servelle Chambolle-Musigny Les Borniques Premier Cru 2022

Bordering Bonnes-Mares, the Les Borniques Premier Cru vineyard is almost squeezed between Musigny, Bonnes-Mares, and Les Amoureuses a location that contributes to the high quality that Amiot-Servelle achieves here. And even though Les Borniques remains relatively unknown compared to its prominent neighbors, it is increasingly being seen as a hidden gem.

Amiot-Servelle Chambolle-Musigny Les Charmes Premier Cru 2022

According to Amiot-Servelle, Les Charmes is one of the house’s key wines and is widely recognized as one of the most prestigious sites in Chambolle-Musigny, with producers like Georges Roumier, Hudelot-Noëllat, Dujac, and Amiot-Servelle crafting beautiful, highly sought-after wines side by side. As with Derrière la Grange, Amiot-Servelle recommends that Charmes be cellared for five to seven years to fully reveal its “charm.”

Amiot-Servelle Chambolle-Musigny Les Fuées Premier Cru 2022

On the upper slopes next to Bonnes-Mares lies the Les Fuées Premier Cru vineyard. The name "Fuées" refers to an old agricultural term—a "fuée" was the area of land a farmer could work in one day. Amiot-Servelle farms 0.18 hectares here, producing a rare wine that should not be opened before eight years of aging, but which has an aging potential of more than 20 years.

Adjacent to Les Charmes lies Les Plantes, producing fine, classic Chambolle-Musigny. The name "Plantes" refers to young vines, and indeed, it is from Les Plantes that the youngest vines for the wines in this parcel are sourced. Described by the domaine as one of their most delicate wines, Les Plantes offers aging potential of 10–20 years.
